This recipe is a favorite of Gian Luca, the owner of Corte the Gabriela. A combination of smells, colors and flavors that we love to share with our guests. As you know, in our boutique hotel in Venice, we take breakfast really seriously. The honey cake with yogurt and fruit is one of the delicacies waiting for you on our morning buffet, with many others sweet and salty specialties.
We guess your mouth is already watering…let us learn to bake this cake together, we tell you everything step by step. Preparation is quite simple, you should only use high quality ingredients and try to resist the temptation of taste it until it will be warm! The quantities below are fine for 6 – 8 people, it is up to you the cut of smaller or bigger slices…
Ingredients for the pastry:
250 g all-purpose flour
150 g butter
2 spoons sugar
1 egg
Ingredients for the filling:
2 eggs
170 g honey
120 g raisins
200 g yogurt
200 fresh fruit puree (plums, apples, pears, apricots or peaches)
½ teaspoon cinnamon
½ teaspoon nutmeg
Now you have all the ingredients, so let us cook. Start from the pastry of our cake: mix quickly the flour with butter, egg and sugar until you get a smooth and uniform dough. Form a ball and let it rest in the fridge for at least 30 minutes.
Do not waste time, we have already many passages to do. To prepare the filling, beat well the yolks with a whisk. Be careful not to create lumps and add plain yogurt, fruit puree and honey. After mixing these ingredients, add raisins we had previously soaked in cold water for ten minutes. Squeezed raisins, together with spices, will end into the yummy filling. Now here you are the most difficult passage of the recipe: beat the egg whites until stiff, add them carefully to the filling, working from the bottom upwards.
You made it, congratulations, now you only need a little patience and you could taste your yummy cake. Let us take the pastry from the fridge and place it on a round carefully-floured baking sheet. Distribute the filling of yogurt and fruit, cover it with a disco of dough and close well. Put in the oven at the temperature of 180° for about 50-55 minutes until the cake will be golden on top, then allow to cool.
It is the right time to serve this delicacy…be sure to be generous in portions!
A last practical suggestion: to avoid the filling to get out from the pastry during cooking, create a sort of rim with your fingertips. That is all: enjoy your honey cake with yogurt and fruit!
